In a food processor or vitamix blender combine cilantro, jalapeno's, scallions, ginger and olive oil. Blend until combined.<br />
Put the shrimp in a bowl and pour the cilantro marinade over the top. I leave this sit for up to 4 hours. But you can go an hour and call it good.<br />
Then I put them on the skewers and cook on the grill for 3 minutes on each side depending on how hot your grill is.<br />
Then Enjoy however you would like!<br />

Bone broth isn't something new. It's an old food that your grandma or great grandma would make.<br /><br />It simmers for 24 plus hours and is the tastiest "broth" you will ever eat. It boost your immune system, digestive health, allergies, & brain health. It's also helps teeth health, joints, hair, skin, and cellulite!<br />That's not all! It's high in calcium, magnesium, phosphorus, and other trace minerals. Bone broth also contains high amounts of gelatin, and collagen.<br />Improves mental alertness, memory, boost moods, reduces stress, and helps regulate blood sugar. Proline is also found in bone broth which is great for helping blood vessels release cholesterol build up. I could go on but let's just say this stuff is a super food! Here is how you make chicken bone broth.<br /><br />My recipe for chicken bone broth-<br /><br />1 - 5 pound organic local or not free range chicken.<br />*optional- chicken feet, heart, gizzards, and neck.<br />1 onion whole unpeeled but cut into 4 pieces<br />2- carrots cut up into chunks<br />4- stalks of celery<br />half of an apple<br />1/2 cup of unpasteurized apple cider vinegar.<br /><br />Stuff your bird with half of all the veggies and apple. I use a 6 or 8 quart enamel cast iron pot but you can use whatever you would normally use to roast a bird. I just use my pot because once it is out of the oven I use the same pot to simmer the broth for 24 hours.<br /><br />Once the chicken is roasted you can serve it to your family just save the bones! I usually take all the meat off and use it later for soup.<br /><br />You add the bones into a stock pot and use 6 quarts of filtered water. Add all the veggies you roasted with the chicken. Take the other half of the veggies you did not roast with the bird and put them in the stock pot. You can add herbs thyme, rosemary etc. Then pour in your 1/2 cup of ACV, cover and simmer on low for 24 hours. You can also put this in a crock-pot. <br /><br />Once the stock is complete strain with a fine metal strainer to get out all the bones, and veggies. When cool enough put in jars of your choice or freezer bags. Ripe peaches. You will need about 2 or 3 pounds per quart. If you are using smaller jars or making less please adjust this recipe accordingly.<br />( if you end up buying extra peaches slice and freeze them on a tray for an hour and place them in a baggie for the winter for smoothies! YUM!)<br />
9 cups of water<br />
1c honey or more per your liking<br />
7 cinnamon sticks( one per jar)<br />
1/2 tsp lemon juice per jar (keeps them from browning as bad) You do not need to use this if you would like to omit it.<br />
<br />
1. Peel the peaches. Put them in boiling water for 2 minutes, and then immediately dump them in ice cold water. The skins will come right off. SO much easier than using a knife, and less waste, too. this is the same method I use for canning tomatoes.<br /><br />
2. While you are working on your peaches, bring the 9 cups of water, and 1 cup of honey to a boil in a medium saucepan. again if you are using smaller jars adjust amounts.<br /><br />
3. Remove the pits from the peaches, then halve or quarter them. You could even cut them into small slices, but I like to just cut them in half since it takes less time.<br /><br />
4. Place 1 cinnamon stick in the bottom of each sterilized quart jar.<br /><br />
5. Fill the jar with the peaches, placing them pit-side down (if you are using halves)<br /><br />
6. Fill the jar the rest of the way full with the hot honey-water solution. Leave 1/2″ headspace.<br /><br />
7. Adjust lids and process quart jars in a hot water-bath canner for 25 minutes.<br /><br />

I make dinner every night. And at each meal we gather around the table. It's funny my daughter was telling us that when she tell's her friends this they look at her like REALLY?! Some of her friends families do not do the same. That make's me really feel bad for those kids, and parents. I look forward to our family time at the table.<br />
On Sunday's we have Spaghetti Sunday, or Sunday gravy. Depends on how I make the sauce. And this is something that my kids will remember growing up. Tradition's and memories. So important in a family to have this.<br />
Now I know some families can't get together at the table nightly, and some parents work and kids are home alone. But on weekends get together and enjoy a meal together. Make it and eat it together for an even better experience!<br />

Chicken Gyro's<br />
<br />
Tzatziki Sauce<br />
8 oz plain yogurt Low fat (drain off liquid)<br />
1 half of a cucumber peeled and seeded<br />
2 cloves of garlic<br />
1 tsp white wine vinegar<br />
salt and pepper<br />
olive oil about 1 tbsp<br />
squeeze of a lemon half<br />
<br />
Put the yogurt into a blender or food processor. Then shred the cucumber into a paper towel or cheese cloth if you have one. Take the cucumber and squeeze out as much juice from it as possible. Then put the shredded cucumber into the processor.<br />
I then put everything into the processor and mix until combined. I make this before the marinated for the chicken so the flavors combine for a bit longer.<br />

3 chicken breast.<br />
4 cloves of garlic. crushed.<br />
1 Lemon<br />
2 tsp red wine vinegar<br />
2 TBSP olive oil<br />
2 TBSP greek yogurt plain<br />
1 TBSP dried oregano<br />
salt and pepper<br />

Feta cheese<br />
diced tomato<br />
sliced red onion<br />
Pita or flat bread<br />
<br />
Take the chicken breast and butterfly them for thinner pieces. Then in a medium size bowl mix together Greek yogurt, olive oil, red wine vinegar, garlic, lemon juice of one whole lemon, oregano, salt and pepper. Marinate the chicken in this mixture for at least an hour.<br />
Once marinated broil the chicken on low for about 10 minutes. Depending on your oven. Cut into strips.<br />
<br />
Warm your pita bread or flat bread in the oven for a few minutes. Put together your Gyro's with the chicken, diced tomatoes, sliced red onion, tzatziki sauce, and feta cheese. And enjoy YUM!<br />

She would comfort me in the hard times, and I would do the same for her. She shared her past with me. Stories of growing up, meeting my grandfather, her parents, her sisters and brothers. And most importantly she would share stories about my mom that my mom liked to not share or would chose to forget. <br />
My grandma or Wamma is greatly missed by all. But not forgotten at all! Not a day hasn't past where she doesn't come to mind. Now she is in a better place. Where she is no longer sick. She is back with her loved ones that she mourned for years. And now when my time comes I get to meet up with her again. Last November my kids and I got to come visit San Antonio and spend Thanksgiving with my family. She was so happy! We had a good time. I never thought that would have been the last time I would see her.<br />

</div><div>Cinnamon Filling</div><div>1/2 cup baker’s cinnamon filling</div><div>2 tablespoons water</div><div>2 teaspoons milk, to brush on dough</div><div><br />
</div><div>Vanilla Glaze</div><div>1 1/4 cups confectioners’ sugar</div><div>1/2 teaspoon vanilla extract</div><div>2 to 3 tablespoons milk, enough to make a soft, spreadable icing</div><div><br />
</div><div>Directions:</div><div>First, make the dough. Combine all the ingredients. Mix and knead everything together — by hand, mixer or bread machine set on the dough cycle — till you’ve made a smooth dough. If you’re kneading in a stand mixer, it should take about 7 minutes at second speed, and the dough should barely clean the sides of the bowl, perhaps sticking a bit at the bottom. In a bread machine (or by hand), it should form a smooth ball.</div><div><br />
</div><div>Place the dough in a lightly greased bowl. Cover the bowl, and allow the dough to rise, at room temperature, till it’s nearly doubled in bulk, about 1 to 2 hours. Rising may take longer, especially if you’ve kneaded by hand. Give it enough time to become quite puffy.</div><div><br />
</div><div>While the dough is rising, lightly grease two 9″ round cake pans. </div><div><br />
</div><div>Transfer the risen dough to a lightly greased work surface, and pat or roll it into a 16″ x 12″ rectangle. It’s a nice, soft dough, and pats out easily.</div><div><br />
</div><div>To make the filling, whisk together the baker’s cinnamon filling and water. Brush the dough lightly with milk. Spread the filling evenly over the dough, covering the entire surface.</div><div><br />
</div><div>Roll the dough into a log the long way; it’ll stretch to about 20″ long as you</div><div><br />
</div><div>Using a serrated knife, slice the log into 16 slices. In order to cut down on drag, it helps to rinse the blade in hot water, and wipe it off, between slices.</div><div><br />
</div><div>Space eight rolls in each of the prepared pans. Flatten them gently.</div><div><br />
</div><div>Cover the pans, and let the rolls rise till they’re noticeably puffy, about 1 1/2 to 2 hours; they should spread out and start to crowd one another.</div><div><br />
</div><div>While the rolls are rising, preheat the oven to 375°F.</div><div><br />
</div><div>Bake the rolls till they’re brown around the edges and beginning to turn golden brown across the center, about 20 minutes.</div><div><br />
</div><div>If you’re going to serve the rolls immediately, make the icing while the rolls are baking. Combine the sugar, vanilla, and enough cream or milk to make a spreadable icing. If you’re not serving the rolls immediately, don’t make the icing yet.</div><div><br />
</div><div>Remove the rolls from the oven, and loosen their edges with a knife. Turn them out of the pan onto a rack. To enjoy right away, spread with the icing and serve.</div><div>To serve the rolls later, allow them to cool completely, then wrap in plastic wrap and store at room temperature for up to 3 days. Fifteen minutes before you’re ready to serve, preheat the oven to 350°F. Unwrap the rolls, place them on an ungreased baking sheet, and tent lightly with aluminum foil. </div><div style="text-align: center;">Tonight I started my Christmas countdown on this blog. As I wrote the first post, and started thinking of a recipe to write I started to think about my step mother Fran. </div><div><div style="text-align: center;"><br />
</div><div style="text-align: center;">This is usually the time of year where she just lights up. She loves Christmas!! I remember growing up our tree was up and Christmas music playing sometimes before Thanksgiving. We would go buy a flocked tree. I don't even know if they do that here in Minnesota, or anywhere anymore for that matter. </div></div><div style="text-align: center;">With the tree came decorations. And she still has the same decorations( and some new ones) that we had growing up.<br />
Let's not even get into the decorations we had outside our house. You literally felt like you were in a Christmas Village! </div><div style="text-align: center;">Sure times change. Kids grow up, people get older. Some of the decorations don't last through the years. But we always have the memories. And that is what she did. She gave us some of the best Christmas memories.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Now that I'm older and have a family of my own I enjoy the decorations! I do wait until December 5th to get my tree, but the Christmas music starts the minute they hit the radio on Thanksgiving.</div><div style="text-align: center;">Christmas decorations go outside the house the day after Thanksgiving.<br />
And now since the miles separate her and I we talk on the phone. We share recipes, we gripe about the darn lights and how much we need to spend on new ones this year. </div><div style="text-align: center;"><br />

We had read the China Study a few years back and thought about switching to vegan. We realized that we wouldn't be able to do it full time.<br />

But as the years past we started meatless Mondays with the rest of the country, and stopped eating red meat more then once a week, and now down to a few times a month. Since watching Forks over Knives we have started eating more meatless meals. We tried a few vegan recipes found a few that were not so bad. But we did discover some fantastic Vegetarian meals that we have started to really enjoy. I wanted to share with you a recipe that is becoming a favorite of mine. I already love stuffed peppers. But the kind I used to eat had ground beef, rice, tomatoes, and green peppers. The new recipe has no meat, quinoa, carrots, celery, tomatoes, green peppers, black beans, onions, and garlic in it. It is super filling, low calorie, low fat, and full of proteins. Plant proteins! Here is the recipe ENJOY! And if you have any vegan, or vegetarian recipes please share!<br />

Quinoa Stuffed Peppers<br />
4 green peppers, or red. Cut in half and seeded<br />
2 stalks celery<br />
1 large carrot shredded<br />
1 medium onion chopped<br />
2 cloves of garlic<br />
1 can small diced tomatoes<br />
small can tomato sauce.<br />
1 can 15 oz black beans<br />
3/4 cup Quinoa<br />
2 cups water<br />
salt pepper<br />
1 tsp cumin<br />
pepper jack cheese optional<br />
red pepper flakes optional<br />
pre heat oven 375. Cut peppers in half and clean out the rib and seeds.<br />
Take small can of tomato sauce and pour into bottom of a baking dish.<br />
Chop, and saute onion and celery for 5 minutes in a small saucepan. Add garlic for 1 minute. Then add 2 cups of water, diced tomatoes, black beans,quinoa, shredded carrot,cumin, pepper flakes salt and pepper. This needs to cook about 20 minutes until it all thickens up. Stuff peppers and top with pepper jack cheese(optional).<br />
Bake 30-40 minutes depending on how you like your peppers. I prefer mine soft but not to soft so I go for 30 minutes.<br />
When they are done we enjoy with a little hot sauce over the top. You can do what you would like :) Enjoy!
